If I remember correctly, Japan is nation of consensus so everyone has to agree to a change before a change take place.
So anyone who are vegetarians in Japan may have to do majority of vegetarian food preparation themselves.

I’ve lived in The Pan for ages. The only fully advertised as ‘vegetarian’ main meal I’ve seen (as a non vego) have been at curry houses and Halal restaurants. Anything else that’s vegetarian is because it is, not because of any deliberate design.

Why should a country change for a specific food type?
It’s a business, if demand is high, they will offer. If low, there are not obliged to accommodate you

I wouldn’t recommend Japan as a tourist destination if you have those requirements

Japan has plenty of fields in the countryside for people making these demands to graze in the fields for free.
I don’t understand the “I’m visiting a foreign country and I’m going to make demands that they accommodate my lifestyle choices” attitude.
